Gourmet knives are stamped blades Jan 31, 2003
In reading the comments on these knives I noticed that there was a different type of metal in the Gourmet vs the Classic. I checked my knives and then contacted a friend of mine that is into knives. He said that Molybdenum is put into the steel for forging purposes only thus it has no effect on the sharpness or finish. Because Gourmet is a stamped knife it does not require this type of material. I have the knives and they are great. They are not the quality of the Classic but they don't carry that price either.

You get what you pay for (and I mean that as a compliment) Jan 08, 2008
By M. Dreibelbis I essentially agree with what other reviewers have written (except that Mn is molybdenum- Mn is manganese, Mo is molybdenum). Are they of the superior craftsmanship of the Wusthof Classic line? No, they are not. But at a fraction of the price of Classic, you already knew they wouldn't be. The plastic handle and thinner steel do feel a bit on the cheap size when holding the knife, but they look great alongside the rest of our Wusthof cutlery (which is why my fiance and I bought them). And don't worry about performance; all meats that I've cut succumb nicely to the straight edge blades. What I can't comment on is the blades' longevity. We've only had them a short while, and I don't know how they'll hold their edge. My final word on them is that those who can afford the Classic line (and I truly wish I was one of them) should purchase the Classic. But for those who can't, don't be shy about purchasing Gourmet. You'll get what you pay for, and since you're paying for Wusthof, how disappointed can you be?

Wusthof Gourmet Series Knives Jan 15, 2003
By First time Wusthof Buyer Just received these knives and they seem to be a fine set of steak knives. However, I noticed that these gourmet series (with the exception of the 8" chef's knife), use different steel than their more expensive classic series. Specifically, the classic series uses "X50CrMn15" material, whereas these gourmet series uses "X46Cr13". The major difference being that X46Cr13 contains less carbon (0.5% vs. 0.46%) and that it does not contain Mn (molybdenum), which is needed for knives to be totally dishwasher safe. ...

Double check your Wusthof order! Dec 31, 2009
By Tomen8r Wusthof is a producer of quality knives, but double check your order, especially if you ordered more than one knife at a time. I have read many consumer reviews on the block set where consumers found that only a couple knives from the set were quality while the rest were not. I received a block set (8130) of Wusthof knives for Christmas. After close investigation, I noticed that most of the knives were not what I ordered. While I ordered the Gourmet line, most of the knives received were of much lesser quality. Only three knives were the actual gourmet line of knives as they are stamped with serial numbers. If your knives are stamped with a number beginning with "8", then chances are you received the incorrect knives in the set. Wusthof quality knives begin with the number four (including Grand Prix, Culinare, Gourmet, etc). I have contacted both the Food Network and Wusthof to make them aware of this issue. It appears there has been a problem in the shipping area of one of the two. The Food Network has been great when speaking with them. I want to make sure everyone has actually received what they have paid for. As far as the three Gourmet knives I received, they are very good quality. I sent the entire block back (paid for by the Food Network) and am looking forward to "playing" with my new set of Gourmet knives.

Wusthof Gourmet Steak Knives: 4 Piece Set = Great Value Oct 31, 2010

These are by no means cheap knives. They are inexpensive relative to the quality they deliver. The knives I really wanted were also from Wusthof. Unfortunately, they were $180.00. So the decision was between a.) the best knives which will last a lifetime or b.) the best knives which will last 25 years for less than a third of the price. The gourmet series knives cut through steak like "buttah". They feel good and well balanced in the hand. The fact that it's not a full tang has no effect on the usefulness or performance so I am happy with these knives and recommend them to you if you want the best and if money IS an object.
